I wish you had mentioned where you are living. Sudanese food can be quite delicious if done right. I would suggest looking to see if there is a sudanese or ethiopian restaurant near you. I live in a metropolitan city and the one in my city does offer cooking demonstrations from what I understand. The most important part of your meal will be obtaining the right spices and figuring out what kind of ethnic background your partner has in the Sudan.
Think of the Sudan like the USA. It depends what part of the USA you are from and your ethnic background to make an authentic home cooked meal. In the USA there is a vast difference between northern fare, southern hospitality, or western regional favorites. In the USA an Italian family may have staples that greatly vary from a German family, Indian family, or a family in California or Texas... It is all very complex. Sudanese cuisine is the same.
Southern dishes are similiar to Ethiopian meals. They heavily use rivers for fish and are different than northern and eastern favorites which draw recipes from the sea life. Also the tribe and ethnic background in which you belong to can make a difference. Don't get discouraged. You can surprise your boyfriend by sticking to some simple staples and starting with thos.
I would suggest starting with an easier dish like couscous, rice, or a thin traditional bread. Chicken is probably the easiest dish for a beginner. Ginger, peanut, and vegetable chicken dishes are fairly simple. Look for some books and sites that represent your boyfriends unique heritage and regional upbringing.
You probably have an idea of what your boyfriend enjoys eating and can make your decision from what you already know. You are going to have to ask your boyfriend what he enjoys. The Sudan has a VERY diverse population which will make picking just one recipe difficult. Keep in mind the food draws heavily from multiple influences. Look to him for the clues.
