They are made with raw peanuts in the shell. If you can find raw all you have to do is boil them for 1/2 hr or the shells begin to separate season as you wish. Roasted whole peanuts won't work.



Boiled peanuts are a great Indian favourite as well,India grows a lot of peanuts & they are used in many different ways.The basic cooking style would appear the same,but many people safe time & fuel by boiling them in a pressure cooker.Can be fully boiled in half an hour.
Delicious any way you do them,we have street vendors selling boiled as well as roasted nuts,done while you wait.

Start with fresh "green" peanuts. Green means raw. Wash in shell in cold water. Put them in a pot, cover with cold water about 2 inches above the peanuts. Add salt and hot pepper sauce (like Texas Pete). Some people use a little barbeque sauce or garlic powder. I like adobo, salt and hot sauce. Bring to a full boil (covered) and boil for at least 45 minutes. You can start tasting now.They should be about as soft as a cooked pinto bean. Some people like them really soft and spicy. Now is the time to correct your seasoning and decide whether to cook them longer.When done, drain in a colander and shell as you eat. If you shell them all at once, they will dry out. Refrigerate the leftovers. You can micro on low to reheat. Enjoy ya'll !!!

As a guide, boil 1lb of cleaned, fresh raw peanuts to 4 cups of water with 2 tbsp table salt and some seasoning like McCormick Old Bay Seasoning and star anise. Boil for 2 - 3 hours over medium heat, longer if you prefer the inside nuts to be softer. If you like it less salty, reduce the salt amount. Drain, cool and enjoy!



Make sure what kind of peanuts you will use. The best and most expensive are usually the "raw" or green. This is an all day operation and can take 5 - 7 hours. Be careful to not let the pot run dry. You should check on the water level frequently. Also check the amounts of salt. This is an easy process, but needs patience.
