Will any rice flour work for Dango?!


Question: Will any rice flour work for Dango?
I've always wanted to try dango, and I've found a few good looking recipes for what I want make (mitarashi dango). Whenever they list the flour, its always mochiko or joshinko. Is there a difference between the two? Will any rice flour work? Ive tried mochi, and I know that uses rice flour, but I dont like how gooey it is. If you have any suggestions so that I can avoid the gooeyness or make it firmer, it'd really help!

Yes, there is difference between mochiko(shiratamako) and joshinko.
Mochiko(we call shiratamako) is made of sticky(mochi) rice and sticky or gooey(what you call it) in texture, while joushinko is made of the usual(japanese short grain) rice and is not as sticky as the former.
To make Dango firmer, you would better use more joshinko or use only joshinko.
According to a recipe, the recommended ratio of the two is half and half.

PS: In the pictures, you will find pics of monkeys and cats tightly close together to warm themself in cold weather. We say such a situation "dango", that's why you find them in this pics.
