I am going to share a Cantonese century egg soup recipe with you and hope you would enjoy it.

<<<<< Century eggs, Tofu & Coriander Soup >>>>>>> Serves 4 persons

2 Century eggs (each cut into 4 quaters or cut into bite size)
1 semi-soft Tofu (cut into big cubes)
500g Coriander (400g for preparing the stock, 100g chopped roughly for garnish)
12 fish balls or cuttle fish balls (we usually use fresh fish filet slices in Hong Kong, I guess fish balls are convenient
for you)
300 g Pork
2 slices of fresh ginger
sesame oil ( a few drops)
1.5 to 2 litres of water

1) heat up 800 cc of water in a small pot till the water boiled, put pork into the hot water and boil for 2 minutes, remove the pork from the pot then wash the pork with tap water. This would wash away the blood, fat and dirt from the meat.

2) heat up a stock pot with 2 litres of water, bring to boil, then put pork, 400g coriander and ginger into the stock pot and boil over medium heat for 10 minutes

3) Remove pork, coriander from the pot, add century eggs and fish balls into the stock and boil for 5 minutes, then add tofu cubes into the soup and bring to boil again.

4) Turn off heat, add salt to taste, add the chopped coriander into the pot, sprinkle sesame oil and serve hot
