Ingredients
1 cup sugar
3/4 cup all-purpose flour
3/4 tsp salt
3 cup milk
3 egg yolks
2 tbsp butter
2 tsp vanilla
1/4 cup brandy
1/2 cup evaporated milk or whipping cream
In a sauce pan put sugar, salt and flour and mix well.
Gradually add milk and mix after each addition.
Beat egg yolks separately and add to the mixture.
Slowly bring to boil stirring constantly until thickened. Add butter and stir.
Let it cool to room temperature or in a refrigerator.
Add evaporated milk , vanilla, and brandy. Whip the mixture with a blender.
250 g (8 oz) butter
1 cup caster sugar
1 egg
1 teaspoon vanilla essence
2 1/4 cups plain flour
1/2 cup custard powder
1 1/2 teaspoons baking powder
for the butter icing
1 cup icing sugar, sifted
2 tablespoons butter, softened
1/2 teaspoon vanilla essence
2 tablespoons condensed milk
method
1. Cream the butter and sugar until light and fluffy.
2. Gradually beat in the egg and vanilla essence.
3. Sift dry ingredients and fold into mixture.
4. Break off pieces and roll into small balls.
5. Place on ungreased baking trays and press down with a fork.
6. Bake in a moderate oven 180-190°C (350-375°F) for 15 minutes.
7. Cool on a wire rack. When cool, join pairs together with butter icing.
for the butter icing
1. Gradually beat half the icing sugar into the softened butter, add vanilla essence.
2. Beat in condensed milk and add remaining icing sugar.
There are several ways to make custard, using a good quality premix custard powder is one, then there are recipes for things like creme anglaise (english cream) creme brulee (burnt cream) egg custard etc.
basically use 4 egg yolks to 1 pt of milk or cream
vanilla essence or pods never use vanilla flavouring
sugar
whisk sugar and eggs with the vanilla
warm the milk to blood heat
pour over the egg mixture
gently heat on the stove do not boil
till thickens

1 . vanilla bean
1/2 tea spoon. lemon zest
1/2 orange zest tea spoon
Mix dry ingredients 1st, add eggs and milk. Stir until smooth. Cook in double boiler 15 minutes or until thickened, stirring constantly. Add flavouring when cool.
the way you can tell if its cooked stick a wooden skewer in the mix and pull it out, it it comes out clean its ready to taken off the heat.
leave in the fridge until cool.
