Just like some people say westerners smell like beef, its all just generalizing so nothing to be offensive.
I personally don't smell Chinese like 'tuna' even they work in the restaurants and Indians don't smell like curry either so really can't share my same point of view as you.
Chinese from different regions / countries have different kind of diet so basically can't group them as 1 too.

One of my friends works as ground staff of an airline company told me that flights from different countries smell significantly different, she can recognize which country the flight from by her noise. For example, flight from France smells like cheese, flight from India smells like curry spices, flight from Australia smell gamy (like mutton)..., it sounds funny to me!

China is a big country, the people from the north smell different from the south or west. Chinese from northern part of China eat raw garlics and most of them have bad breath (I lived in Beijing for nearly 3 years and the smell from those taxi drivers annoyed me very much!!). Some Chinese from the south (usually places near the shore) smell like salty fish because they consume a lot of dried fish or shrimps. Therefore, I believe the smells are from what those people's daily diets.

Ditto, it could be due to their diet. Chinese and Japanese eat 5 times as much fish as the average person in the world. Tuna is a huge favorite and all the markets have them. It is either that or your exposure to Chinese only involve those that work in the tuna market or Subway. They also use a lot of fish oil for food preparation, so again, it is likely related to their diet. They are a proud race and mostly nice people, some of their rulers are whacked, but ...
