depends. what religion?

Absolutely,There are many examples; Most Mexicans will not mix meat and dairy, that is, most authentic Mexican foods have little or no cheese, and the majority of Mexicans will not accompany meat with any kind of milk. It is believed that this is due to the mass migration of Jews from Spain who spread the Kosher custom of separating meat from dairy. These Jews where forced to convert to catholicism, due to this conversion they became part of the mainstream population, and many of their customs became common place.

On the food itself, not much. We have "pan de muerto" bread around Day of the Dead and "rosca de reyes" or Kings' Cake on Jan. 6th which is Three Kings' Day. And then on Feb. 2nd, Day of the Virgin of Light, we have a tradition that whoever gets the baby out of the Kings' Cake has to serve tamales to everyone else. During Lent (the time between Ash Wednesday and Easter) most people don't eat red meat on Friday. They eat chicken, fish or other seafood while others might only eat fruit, vegetable and dairy products, but this is ONLY during Lent. Religion has no influence on what foods may or may not be eaten or the ingredients or the way in which food is prepared as most Mexicans who are religious practice some version of Christianity. Orthodox Jewish and Muslim Mexicans usually observe the food rules dictated by their religions.
