Can I broil carne asada instead of using a skillet?!


Question: Can I broil carne asada instead of using a skillet?
I dont know much about mexican food and plus Im a vegerian. The recipe says to fry it but I think I used to much olive oil in the marinade because its a skirt steak and really fatty so it will be to greasy if I cook it on the skillet. If I broil instead it will it not be as greasy and turn out good?

Broiling is better because it exposes the meat to more heat and allows the fat to drain.



Don't fry it, or broil it, sear it or grill it.!

The two things that make carne asada exceptional are the marinade and the lightly charred meat. A meat that's marinated for 1-8 hours, and caramelized on a hot grill are amazing. If you don't have a grill, a hot cast iron skillet will work, but a grill is much better.

A basic mojo marinade will have oil in it to work the spices into the meat:

* 4 garlic cloves, minced
* 1 jalapeno, minced
* 1 large handful fresh cilantro leaves, finely chopped
* Kosher salt and freshly ground black pepper
* 2 limes, juiced
* 1 orange, juiced
* 2 tablespoons white vinegar
* 1/2 cup olive oil


After the steak has marinated, you will only need some olive oil rubbed on to your grill or hot skillet to prevent sticking (the video below shows the cooking process).

Grill the whole steak for 4-5 minutes on each side (more if you want), then let it rest on a cutting board for 5 minutes before you cut it into angled slices.

Fajitas must be grilled over charcoals, as the flavor actually comes from the smoke and not the seasonings. If you broil them , all you will get is a bland roast flavor. You do not need to add olive oil, but will benefit from adding orange or lemon juice, as the acids help break up the lean meat. Skirt steak must be trimmed of most fat, and filleted prior to grilling. Being such a lean meat when properly prepared, fajitas must be grilled over embers and not live fire.

Sure you can but with skirt steak, flank or sirloin, just do not over do it, cook it for 3-5 minutes on each side, let it rest for 5 more minutes before cutting it into strip for your tacos/burritos.



yeah, you can broil it... BTW, you've picked the best type of meat for carne asada, I love skirt steak! don't forget your salsa and tortillas. YUM!



Skirt steak is very, very lean. It will NOT broil well; it will be tough. You can just wipe off the excess oil/marinade with your hands and cook as directed.
