5 days is fine if it's been refrigerated, but you don't want to push it much longer.

If you aren't going to eat it right away, freeze it.

As long as it doesn't have any funny smell, texture, or any visible molds or growths on it, then it should be okay to try. If it tastes funny (funny as in not normal) then I would pitch it.

I am pretty sure your sauce and sausage are still safe to eat as long as it was refrigerated. If you plan to keep it any longer than today, I would freeze it. You can always defrost in the microwave.

if it has been refrigerated the whole time it will be fine. There is so much sodium in both that it is well preserved.
