Question: What makes Middle Eastern chicken yellow?
A few years ago, a woman I knew from Morocco made chicken on a kabob for me, and it bright yellow on the outside and normal white on the inside. I had never had Moroccan food before, and wasn't sure if it was just something she did until a Middle Eastern place opened near my house and every time I get chicken there it is the same yellow.

Is it a spice? An oil? The way it's cooked?

Tumeric, probably not saffron. Saffron is a flavor element and a little bit of a color element. It's expensive. Tumeric is very bright yellow and used in yellow curry.

First it may be the type of chicken, with red feathers & yellow skin fat.
American domestic chickens are usually white feathered, with pale fat.
Moroccan cooks may also use paprika or saffron, which adds colour.
