NEVER TO CHANa!

Lamb piazzi. (btw that's a chefs special similar to dopiazzi at my local indian takeaway)
I like lamb madras and also love samosas.

I make my madras curry an unusual way by first making a base gravy. This contains lots of onions carrots, cabbage, Swede, red& green peppers cumin, curry powder, coriander, hing, ginger and garlic paste and 250 mls of sunflower oil. this is then cooked and blended diluted 50% and labeled as gravy.

I then pre cook the lamb in a wok I add garlic, chili powder, onions, corriander, cumin ginger then about a cup full of the "gravy" stir fry until i get a good consistency. Its beutiful!
Save the gravy and next time you can make your curry in less than 20 mins if your meat is pre cooked!
I love Indian food so aromatic and tasty.

What you should do is either find a good recipe for a Goan dish, something with fish, (Indian/Portuguese blend) or find a decent Goan restaurant. Goan food is AMAZING.
Or, you could look for Indo-Chinese food. You'd be surprised how insanely good it is! Try some Haka noodles.

personal preference

You could try a butter chicken, a chicken saagwala (I had it in Goa and none of the restaurants here seem to know what it is, but it's a creamy sauce that has liquidised spinach and mace and cinnamon), or a chicken roshan (garlicky & tomatoey). Perhaps try a lamb (mutton) or prawn curry for a change.

As for me I'm a naga phaal girl, haven't found a curry hotter :)
