Question: Persian dish: Baghali Polo ba Morgh?
I usually make Baghali Polo with boneless chicken, either thighs or breast meat.
What about using bone-in drumsticks and thighs? I have a pack of bone-in chicken in the freezer I can defrost... or should I go get some boneless chicken?

Answers:

if you cook the chicken separately to the rice, then it really doesn't matter, but if you cook the polo (cf pilau) then a proper pilau has the chicken cooked at the same time in the same pot, so you may have to adjust the cooking times to accommodate the chicken on the bone.

Cooking the chicken with the rice and beans means a rather tasty stock, which is absorbed by the rice.

Just cook the drumsticks and thighs slightly longer. It helps to bring them to room temp before cooking...just cook thoroughly.

I had a similar problem with jujeh kebab years ago. My dad corrected me.
