Fish and anything that is battered. Fish taints the flavor of everything you fry afterwards. Battered stuff leaves little floaties everywhere that you must constantly clean out or you'll end up with burnt pieces of batter stuck to anything else you fry.
P.S. When changing fryer oil, you should keep 10% of the old oil. The old stuff has already gone through a chemical breakdown, and helps condition the new oil to work better from the beginning.
