You don't need to know anything to attend, all you need is a desire to learn. Your first set of classes will most likely focus on teaching you knife cuts, and you'll be practicing them throughout the entirety of your career. If you really want to cook, I say go for it. If you have any doubts though, you need to think long and hard. The admissions representative should be able to answer all your questions and take you on a tour of the school.
Myself. I haven't been to the school you named, but I am currently attending the Le Cordon Bleu college. I had zero cooking experience before I started, but not anymore.
I would suggest that the first thing you need to know is the name of the school. Le is not the article for The Académie. Second, to which L'Academie de Cuisine are you referring? The Gaithersburg school, or Le Cordon Bleu Academie d'Art Culinaire, Paris? For either you would not need to prove significant culinary knowledge. Go to the website and see the entry requirements. Also, there is a campus in Atlanta but it is not THE Le Cordon Bleu Academie d'Art Culinaire.
