I certainly wouldn't take the time to cook and can oatmeal. Quaker Old fashioned oats take less then 7 minutes to prepare. Canning a long time consuming process and you always have the chance of contamination, especially with non-acid foods. There are times when I''ve made enough oatmeal for 3-4 days, refrigerated it, then just reheated enough for breakfast in the microwave for 60-90 seconds. You may have to add a bit of milk or water to thin it out. Truthfully, I've never heard of anyone canning cooked oatmeal.
