cooked some pre sesoned riblets in oven @ 375 for1 1/2hrs are they supposed to be a little pink on the inside?!
they were pork loin riblets

If the meat has been pre seasoned or slightly smoked the meat may remain fairly pink of being cooked. A good way to make sure they are done poke a toothpick into the meat between the bones. When it slides in with little or no resistance you have a done rack of ribs.
From the sound of it your ribs are done.
