Question: Asian Lemon Lobster Sauce?
Does anybody know a good recipe for an Asian lemon sauce that goes great with lobster or where to find one online?

<<<<<< Lime, Shallots, garlic Sauce >>>>>>> (Asian)

1 fresh lime juice
2 Shallots, sliced thinly
2 cloves of garlic, chopped
1 small red chilli, seeded, sliced
2 green onions, snipped
1/2 tablespoon vegetable oil (eg. peanut oil or corn oil, you can use olive oil)
a handful of chopped Thai basil
1 teaspoon of raw sugar
a pinch of salt (optional)

1) heat vegetable oil in a frying pan over medium heat.
2) stir fry shallots and garlic till fragrant with a pinch of salt
3) reduce heat to low, add lime juice and basil into the pan, stir fry quickly
4) Turn off heat, add sugar to taste and adjust to your preference (either add more lime juice or salt or sugar)
5) pour sauce onto the lobster (steamed or deep fried)
6) sprinkle the chopped green onion as garnish

1 teaspoon of vegetable oil
25g butter (salted butter)
1 juice of lemon
finely grated zest of half lemon
1 handful of chopped fresh dill (ferns and soft stalk tips)
sugar (for adjustment of taste when required)

1) heat vegetable oil in a non-sticking pan over medium heat
2) melt butter in the pan, reduce heat to low
3) add juice of lemon and lemon zest into the pan, stir to combine
4) turn off heat, check the taste and add sugar if required.
5) add chopped dill and pour sauce on lobster

1/2 cup (125ml) rice vinegar
200 g sugar
1 teaspoon salt
3 tablespoons water
1 small onion, finely diced
1 small carrot, finely sliced
1 cucumber, cut into small cubes
fresh coriander leaves, chopped (for garnish)

1) Boil rice vinegar, sugar, salt and water in a saucepan for 1 minute, Mix onion carrot into the pot.
2) Turn off heat, set aside and wait till cool
3) Put cucumber cubes into a bowl, pour vinegar mixture in the bowl, and toss to combine, the liquid shoule be just cover all vegetables.
4) Taste to see if extra rice vinegar, sugar or salt is needed to balance the flavours. If you like spicy food, you may add a finely sliced red chili into the mixture
5) Garnish with chopped coriander leaves.
6) Serve with cooked lobster (you can make it as a dipping sauce)



SouthEast Asian Dipping Sauce


3 garlic cloves
1/3 cup Asian fish sauce
1/3 cup fresh lime juice
1/3 cup packed brown sugar
3 tablespoons water
1 1/2 teaspoons Asian chili paste
1/4 cup packed fresh cilantro leaves
1/4 cup packed fresh mint leaves


Mince garlic and in a bowl stir together with fish sauce, lime juice, brown sugar, water, and chili paste. Dipping sauce may be made up to this point 1 day ahead and chilled, covered.

Serve your lobster with lemon wedges...the best. If you have to have a dipping sauce, serve with clarified butter.
