Trying to Make Haggis?!

Question: Trying to Make Haggis?
But I live in a country where some of the necessary pluck are illegal. What can I use to substitute the sheep's lung and windpipe?

Answers:

I find that most British recipes for Haggis don't call for lungs or windpipe anymore. I guess even the Scots could only take so much of it. Most recipes I've found only call for liver, kidneys and some minced meat (and many call for BEEF! HORRORS!).

I don't think those are necessary ingredients. Whatever offal you have available will do.
