Traditionally Manteca, Lard, has been used but many modern Mexican households and restaurants in North and South America. By the way, butter has much more saturated fat than lard!
But, of course, it depends on the hand stirring the pot, doesn't it?

usually lard like crisco is used but to cut down the fat use a good veggie oil.
