if I buy a steak form the market and it is 8oz when cooked will it be a little less than 8oz?

yes it will because a steak holds a lot of water that is why most good steak houses dry age there meat to remove moisture and to tenderize naturally the meat i,d say your 8oz steak will be 5to6Oz's when cooked rare if longer 3to5Oz's

Yes. It will loose weight from the cooking process releasing moisture (water) and rendering some of the excess fat from the meat. A 1/4 lb burger is the weight prior to cooking.
