I'm hawaiian and i love to make a lot of dishes with spam!
My favourite is a spam riceball kind of thing
You make 2-3 cups of sushi rice or sticky rice
Then you fry thin slices of spam
After the spam and rice are done, wet your hands and sprinkle salt on them
then you shape the rice around the bottom of the spam to make kind of a pillow for the spam
then you take a seaweed strip from a prepackaged container (its not gross you dont even taste it) and wrap it around the middle like a belt (make sure your hands are wet, so that the seaweed is flexible)
dip it in teriyaki and you're done! Its so good!!

Grate some greenish bananas (they have to be solid but not REAL green) with the little holes part of the grater. Add some sugar, some grated coconut (not the sugared kind) and some coconut cream (canned like they use in Thai and Indian food). (You can put some salt into it to favor it up but traditionally, salt isn't used.) It should be the consistency of a thick batter. Put in a greased pan, bake at 350 until a knife or toothpick comes out clean. This is a very common food in the Pacific islands. It's usually cooked in folded banana leaves in the umu (hole-in-the-ground oven).
Lomi Salmon - get some salmon (like the kind used for Lox) but thicker if possible. Cut into small chunks, cut a nice ripe tomato and some onion (green onion is you want) into little chunks and add to the salmon. Mince up some fresh cilantro (chinese parsley) leaves and add along with salt to taste. Cover and refridgerate a few hours. This is really good with 2 day old poi.
At a traditional Hawaiian wedding, I ate something similar to lomi salmon but, instead of salmon, raw pig's liver (ake) was used. It took a little getting used to:-)
Simple but tasty - cook taro leaves in coconut cream. Yummy! (and rich and fattening;-)
And there's poke and kalua pig and huli chicken (a modern Hawaiian food)
Ham, pinaple and cheese on a pizza dough covered with some tomato source = Hawaiian pizza.
