Question: Can I eat my left over sushi?
I have it in a to go box in my car. It will probably be in the car for 2-3 hours. It's 63 outside on the cool side. It's the kind that is just a piece of fish on rice. One salmon and one yellowtail. Can I eat it when I get home?

You should get a lunch kit that is thermally lined and that you can put a small ice pack in to keep your snack cold. You have to keep perishable foods at 4oC or 40oF or less to make sure that the bacteria doesn't grow very fast.

Rice may carry bacillus cereus which may produce toxins that cannot be killed by cooking. The only thing that kills parasites in raw fish is to freeze the fish. Bacteria and viruses can survive freezing but the cold will slow down their growth and reproduction.

NO, a very big No to your question, any sushi that contains raw seafood which is sitting there for longer than 1.5 hours should be thrown away.



It is safest not to eat it. If you leave it that long without refrigeration, you risk contraction of food-borne illness.



If the box is well sealed, it's fine since it's so cold outside and it was just a few hours.
