You are only half correct. Chinese people from the south do eat more rice as it is their staple diet. Japanese people on the other hand eat both rice and noodle, and this is the same as Chinese from the north. Look at the map of Asia and you will see Japan corresponds to northern China in latitudes.
Probably because a lot of China is inland so rice is a great crop to harvest. In Japan, they're surrounded by water (since Japan is an island) so they have more of an opportunity to eat fish.
I don't think that is the case. Southern Chinese eat more rice, because rice is abundant there. Northern Chinese eat more wheat products.

It is a cultural specificity. Rice is the mainstay of the Asian diet and is commonly eaten at every meal.
