Yes, you can. You can really make sushi with just about anything you like. Mind you it won't always be traditional like the California roll (add in avocado visitors from Japan thought it was strange & kind of dig on their food but they mix things up too over there...like a plate of spaghetti with a fried egg on top) but it's a version nonetheless. Anyways, one suggestion is that since crabmeat is slightly crumbly, you might want to just add a touch of mayo as an emulsifier to hold it together so it doesn't fall out of your sushi roll. However, if you make handrolls I guess it won't matter too much. Enjoy!

Imitation crab meat or real crab meat?

Frankly, I'd mix the imitation stuff with mayo as the first answerer recommends. For real crab meat, it's fine by itself if you're wrap/rolling it. Maybe a little bit of old bay seasoning + mayo would be tasty?

If you think "just crab meat" is a bit boring, why not add a sliver or two of fresh cuccumber, carrot or other veggie? If you don't have other ingredients, just rice, crab (and seaweed) is fine since that's how they did it back in the old days. I'll be putting up a crab roll recipe on my blog this week. Sure! "Sushi" is just a reference to the rice and what it's made with. You can use any meat and call it sushi as long as the meat is paired with sushi rice.
