Mexico is a large country and there are many regional specialties. I suppose what the entire country has in common is the use of the tortilla (flour more in the north and corn all the way around) instead of bread and beans (red, black and others too).

If you are planing on making shredded chicken with the Mole, a good side dish is Spanish rice!

Dice : onions, tomatoes, green chiles, cilantro,avoacado and lemon juice and water...salt to liking

Ground beef ..corn taco shells
topped with lettuce tomatoe cheese and sour creem
