I bought a pack of fortune cookies, and they went stale. Now they're crunchy again?!


Question: I bought a pack of fortune cookies, and they went stale. Now they're crunchy again?
I discovered that a nearby grocery store sells big boxes of fortune cookies, so I bought a box for fun. However, the box was so big that the cookies got stale before I could eat them all. That was about a month after I bought them. Now, approximately 5 months after I bought them, they no longer seem to be stale. They have been in my fridge the entire time.

Is there some kind of reasonable explanation for why this might happen?

Maybe they are now rancid.
