Chile Ancho - A dried poblano chile. Mild in heat, but pungent in flavor. Although dried it can still be somewhat rehydrated and stuffed.

Chilpotle - A roasted dried jalape?o chile. The word chilpotle comes from the Náhuatl language compound of "chilli" (chile pepper) + "popocatl" (smoke). Chilpotles are known for their characteristic smokey scent and flavor and being jalape?os are pretty hot inm most people's opinions. They are used for flavoring dishes that require both smoke and fire.

I live, cook and eat in Mexico where we invented these things.



Ancho chili is a mild chili, with a distinctly sweet undertone. CHipotle is a hot chili; it is basically a jalapeno chili which has been smoked and dried.
