Question: What kind of sauce do they use in chow mein? NOT soy sauce though!?
What kind of sauce do they use in chow mein?
I am not talking about soy sauce, because it tastes different.

I want to make it like a Chinese restaurant's chow mein.
Any tips?

What's the SPECIFIC name of the noodles, and the SPECIFIC name of the sauce?

Answers:

most probably hoisoin sauce and the noodles are soba or udon noodles. Try to use a wok, it cooks noodles best for chinese style. You can buy these ingredients from an asian market.



Often hoi sin or oyster sauce(oyster with soy)

But most chinese restaurants add msg powder to dishes for flavour too



Sauce: It should be either Hoisin/Hoison( Don't know how too spell it) or some sort of fish sauce
Noodle: I think it's Udon Noodles



Could be a combination of things including Hoisin, sesame, oyster, and fish sauces
