Can you freeze a red thai curry?!


Question: Can you freeze a red thai curry?
I am concerned in case the coconut milk would split when you thawed and reheated it.

Answers:

As a chef I recommend not freezing it with the coconut in it as it tends to split and go grainy. However, it depends on whether you can 'rescue' it again once you reheat it by adding more coconut or fresh cream.



The coconut milk isnt like normal milk, it wont seperate as its natural not processed. I freeze mine all the time.
