Cut them thin with a mandolin or V slicer. Deep fry them in hot oil. I like pomace olive oil (not e.v.o.) or canola oil. Make sure the oil is hot, 350-375 deg. If you put the end of a wooden spoon in it, you should see bubbles shoot out from it. Put the potato slices in the oil one at a time so they don't stick together. Remove when they begin to brown. Salt them with fine sea salt right when you take them out of the oil.
