Marmalade is always made with citrus fruit (oranges/lemons/limes). Jam is made with any other fruit.

Jam's are made with all different fruit's Marmalade is mainly made with orange's.

Marmalade is made specifically from whole citrus fruit, including the pulp and rind.

Jam is made from any whole fruit cooked and processed to a fine spreadable texture, containing no chunks of fruit.

Preserves are made from whole fruits, and will include chunks of fruit.

Jelly is made by straining out all the pulp of the fruit, so that the texture is jelly-like.

Jams are made with bits of whole fruit and fruit pulp.

Marmalades are jelly with bits of fruit rind added - usually the rind of a citrus fruit. Jelly is made from fruit juice only.

The ratio of sugar to fruit/fruit juice is also different.

I usually stay clear of that whole controversial issue and just buy jamalade. You get the best of both worlds and you know that the fruit miners are getting a better deal.

marmalade is always made with citrus fruits which need no other setting agent. jam is made from all other fruits and needs pectin/lemon juice to aid setting. jam is mainly fruit and sugar, whereas marmalade has, usually, equal amounts of sugar and water added to the fruit.

Jam is a sweet spread, made from pulp and juice of fruit such as berries, apricots, peaches etc.

Marmalade is a sweet preserve with a bitter tang made from citrus fruit (usually oranges)
