How to cook a BEAR roast?!

How to cook a BEAR roast?

My husband shot this bear in Canada, and I have no clue how to cook a Bear roast??? Help please!!!

BEAR ROAST

4 lb. bear roast

1 1/4 tsp. paprika
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. seasoned salt
1 1/2 tbsp. instant minced onion
1 cup beef bouillon

Rub all sides of bear meat with the first four ingredients. Place seasoned meat in crock pot, sprinkle with onion and pour bouillon over all. Cook on high setting for 1 1/2 to 2 hours per pound until 180 degrees F. (check internal temp. of thickest part of roast with meat thermometer). Vegetables such as carrots, potatoes, and celery may be added and cooked the same amount of time as the meat. For gravy: remove meat from pot; stir flour in small amount of water and add to meat juices. Serves 6.

I'd cook it just like beef, but whatever recipe you have for spices add some garlic. The garlic will help get rid of any wild and/or gamey taste the meat might have. The taste will depend largely on what the bear had been eating lately.

That is disgusting!

I've never cooked bear but I would do it like any other red meat. Lately I've been doing deer roasts in the pressure cooker with some garlic salt and pepper. Or you might try a crock pot and slow cook it. Either of these should make it good & tender.

Bear can be really fatty, so, whatever method you follow, allow for that- well cooked,potatoes,and corn- zowie.
