Question:

How can i puff my rotis in ...?

i have recently purchased an electric roti maker that doesn't give me puffed /soft rotis.instead they turn hard and crispy.i ensure that the dough is soft (with the right water content)HOW DO I TACKLE THIS??!!KINDLY ADVISE...

Answers:
If you prefer you may cook keeping the cover open to puff the Roti. After a few seconds, the Roti will be puffing up from both sides and is ready to serve.

If your ratio's are correct in your dough then you are half way there. Not knowing "how" you made the dough I'll take a guess and tell you from experience you overworked your dough, you mixed, (kneaded) it to much, the gluten's have turned to a soft rubbery mass. The same thing happens when you overwork pancake batter, non-fluffy flat heavy cakes.
