Question:

SICK FRIEND!!..in need of strict vegetarian recipes!!?

I have a friend who was diagnosed w/ a rare glandulor disorder..,that cannot be named by any of the many doctors he has seen..If he eats anything outside of vegetables and / or whole milk, the inside of his mouth swells and the area around thee outside of his mouth begins to feel as if its on fire!! w/ that being said.....if you are a vegetarian and you know some really awesome recipes..that are naturally sweet and flavorful ...please ...i beg of u... to send em my way!!...this poor man has been eating the most bland food for almost a yr. now, and lost 70 lbs... because he doesnt know of anything else...PLEASE note that his diet is confined to...vegetables.. {none that are spicy}..and whole milk...if there is something in your recipe that he cant eat, but that one thing can be substituted..let me know!! THANKS FOR TAKING THE TIME TO READ THIS!!! your help would be greatly appreciated!!

Answers:
OMG, what has this guy been eating? Nothing but ready-made mashed potatoes or what?

Vegetables alone are flavoursome (courgettes, broccoli, peppers, tomatos...), so I cannot see why his food is bland (unless he buys cheap frozen, canned or microwaveable veg).
Make sure he uses FRESH veg!

Use herbs to enhance the flavour: parsley, basil, thyme, oregano...

Then naturally sweet stuff: berries, grapes, melons, dried fruit. Add grapes or dried apricots to porridge to naturally sweeten it, or add grapes to fruit smoothies.
Basically, most fruit is sweet anyway.

I will not write out any recipes, but here are some links to pages with tons of vegan recipes:

Suggest he look at the ingredient lists on prepared veggie food packages. Morning Star Farm has a lot of products out there at regular grocery stores.

I also suggest you hook up with your local Seventh-Day Adventist church. They do cooking classes sometimes, and run veggie food stores to benefit the church/church schools.

You can cook him some food with TVP (Textured Vegetable Protein). This way, he'll have some variety. TVP can be used just like meat. It's dry and really cheap (a few bucks for a pound.) You reconstitute this by boiling water and adding the TVP, and letting it simmer until tender. It's a great alternative. No spices or anything added, so your friend should be fine. It IS really bland, but if you can put it in a dish that has beans and tomatos, or something like that, it's great (under normal circumstances, I'd say to add spices/salt to the water when rehydrating the TVP, but it sounds like this man's diet won't allow that).

You should also be able to get some whole milk cheeses. That will help his fat intake.

Good luck! And contact the Seventh-Day Adventist church for more help! They will be in the phone book.

Everyone I make these for loves them

I also reccomend East Indian food. Channa, Dal, and many more are flavorful and vegetarian friendly.
