Quick and Easy Pansit

Ingredients:
1 (8 ounce) package rice sticks
1 teaspoon canola oil
1 cup onions, chopped
2 garlic cloves, minced
1 (8 ounce) package mushrooms, presliced
2 cups cooked chicken breasts, cubed
1 cup carrots, matchstick-cut
1 cup frozen peas
1 (9 ounce) package frozen French-cut green beans
1 tablespoon sesame seeds
2 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1/4 teaspoon black pepper

Steps:
1. Cook noodles according to package directions, omitting salt and fat. Drain and set aside.

2. Heat canola oil in a large nonstick skillet over medium-high heat.

3. Add onion, garlic and mushrooms to pan; saute 5 minutes or until tender.

4. Add chicken, carrots, peas and beans; cook 3 minutes or until thoroughly heated.

5. Stir in sesame seeds, soy sauce, sesame oil, pepper and noodles. Serve immediately.

Pancit

INGREDIENTS
1 (8 ounce) package thin rice noodles
1/2 pound skinless, boneless chicken legs, cut into bite-size pieces
1/2 pound pork tenderloin, cut into bite-size pieces
1/2 cup soy sauce
ground black pepper to taste
1/2 medium head cabbage, shredded
2 carrots, shredded
2 green onions, chopped into 1 inch pieces
1/2 pound shrimp, peeled and deveined

DIRECTIONS
Place the rice noodles in a large bowl, and cover with warm water. When soft, cut into 4 inch lengths, drain, and set aside.
In a skillet over medium heat, brown the chicken and pork until no pink shows. Season with soy sauce and pepper. Remove from skillet and set aside. Saute the cabbage and carrots until tender. Stir in the noodles, green onions and shrimp. Cook for 4 to 5 minutes, stir in the chicken and pork, and cook for 5 more minutes.

-1 medium onion, sliced
- 3 skinless/boneless chicken breasts
-2 cloves of garlic, minced
-1/2 cup soy sauce
-3 carrots, julienned
-1 packet of goya seasoning(can be found in Oriental Stores)
-3 to 4 stalks of celery, sliced
- 1/2 cabbage, sliced
-salt and pepper to taste
-1/2 bell peppers, sliced
- vegetable oil or olive oil
-1 cup chicken broth from the boiled chicken
-1 package of philippine style noodles
-2 packages of rice noodles
―>Directions: Saute garlic and onions.(While this is sauteeing, boil chicken in a 3qt. pot) Add carrots, then put aside. Saute all of the rest of the green veggies one by one and put aside. Once the chicken is cooked, shred the chicken into medium pieces. Saute chicken with the carrots, onions, garlic, soy sauce, chicken broth, goya seasoning packet, and add salt and pepper to taste. Add the noodles over top and stir until the noodles are cooked.
*Tip: Soak rice noodles in water before adding to the sauteed mixture. (Its best to cook this in a electric wok)
