the quality of chocolate doesn't depend only on the percent of cocoa. I like dark chocolate when it contains about 70% of coco. over 85 % makes it bitter and dry. but you should particularly check it's ingredients and make sure that the cocoa butter is the only fat it contains (no vegetable fat !) and that there is not too much (but there is) of sugar in it and if possible no soya lecithin.

The magic number is 85%.

At least 70%. Thats what some health magazines reccomend to get the antioxidants of the chocolate and the benefits. Dark chocolate is loaded with antioxidants and it is good for your brain and heart. High quality chocolate should not have white sugar is my opinion, only unbleached, unrefined sugar or raw sugar.
