What are some good recipes for cod?

I have 4 or 5 cod fillets, no bones. I need a easy recipe that doesn't require a lot of ingredents I can't normally find in my cabniets (doesn't have to be quick, I have all afternoon).

Wrap in aluminum with a few lemon slices and butter. Put on the grill for about 20 minutes! Nothing better!

INGREDIENTS

* 1 1/2 pounds cod
* 1 cup salsa
* 1 cup shredded sharp Cheddar cheese
* 1/2 cup coarsely crushed corn chips
* 1 avocado - peeled, pitted and sliced
* 1/4 cup sour cream

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
2. Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
3. Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

Cornmeal Crisp Cod

Ingredients:
8 large eggs
1 cup water
3 cups yellow cornmeal
1 tsp lemon pepper
9 lbs cod fillets (24 pieces, 6 oz each), thawed if necessary
1 cup butter

Prep:
Whisk together eggs and water in shallow dish. Combine cornmeal and pepper in another shallow dish.

For each serving: dip one cod fillet in egg mixture and then in cornmeal mixture to coat completely. Melt 2 tsp butter in skillet over medium heat; add fillet. Cook for approximately 3 minutes until cornmeal is golden and fish is just cooked through, turning once.
