Why can you not refreeze ice cream?!

Why can you not refreeze ice cream?

are there any vital food poisioning dangers or it just wont taste good?


Answers:
There is nothing specifically bad about re-freezing ice cream, but when ice cream is made it is agitated which gives it its specific texture, when ice cream melts and is refrozen it doesn't have the agitation that, so the texture and other properties change, depending on the composition of the ice cream sometimes this actually changes the taste, of course if ice cream melts and is left out and the liquid composition goes bad the refrozen liquid would not be safe to consume.

You can refreeze ice cream. There is no food poisoning danger unless someone introduces an outside source to the ice cream. All you are risking by refreezing is ice crystals that form from condensation then the warm air causes moisture to form on and around the frozen ice cream.
The ice cream might lose some taste but if you scrape a thin layer off top most of the bad taste will disappear.

I think it's like milk - if it sits out for a bit, it's ok, but if there's a smell, toss it.

I wouldn't be a huge fan of eating it, though, unless it was Haagen-Daz or something like that. The more premium the ice cream, the less air bubbles are in it. Like have you ever noticed that a 1/2 gallon of Breyers normal ice cream is way lighter than a Haagen Daz 1/2 gallon? And that if Breyers ice cream melts and so does Haagen Daz, there will be way less melted ice cream in the Breyers container.

Anyway, if it hasn't been out for long, and it's not in hot weather, and it doesn't smell bad, I'd still eat it!
