refried beans and mexican rice are a good side dish. and you can sprinkle cheese over the beans.thats what my mom usually does.

Rice, cherry or grape tomatoes sound good to me!

Mexican Rice or a Side of Mexican Beans...

Take care..

Bcn_mimosa

my fav restaurant always give me refried beans w/ fried egg on top.

Top that off w/ a little ranchero sauce - yum!

Taqitos or beans and rice. Sounds yummy!

I would make some nachos with hot melting cheese and I would have some mexican rice to go along with it to.

Fruit - Here's a recipe for a fruit salad.

Seven-Fruit Salad

? 1/2 cup lime juice
? 1 pint blueberries
? 1/2 cup water
? 1 pint fresh strawberries, sliced
? 1/2 cup sugar
? 1 1/2 cups watermelon balls
? 2 medium nectarines, thinly sliced
? 1 cup green grapes
? 1 large banana, thinly sliced
? 1 kiwifruit, peeled and chopped

In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2 qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour.

Fried plantains with crema! We always steam some veggies, and squash and carrots always complement tacos nicely, especially if the tacos are spicy. For your kids you should skip the margaritas, but chips and guacamole would be nice.

mexi corn lol or regular corn or maybe some yellow rice or brown rice

Kids usually like a pear salad. Just put a pear on a plate with lettuce underneath, add a dollop of mayo to the hole and sprinkle with grated cheddar cheese. You could also make a shredded carrot (buy them that way) and raisin salad...Just mix the two with mayo. Most kids like these and it gives them fruit.

Here is something for later on:
Make a salad in a jar...save up those mayo or jam, jars and use them for making salad...put some salad veggies like cubed tomato, cucumber, onion, green pepper plus a little shredded lettuce and some salad dressing in the jars and have the kids shake them up and eat them...Even kids who want eat salad, will eat it if they get to shake them up first...

Spanish rice and black beans might be one choice. Guacamole or a mango salsa might also add some variety.

a good side dish would be just some chips or a fruit or somethin like that

Cook up any kind of rice, and add a can of black beans.Or Goya makes delicious rice and bean choices . Or the best treat ever with tacos is this : Take a bar of cream cheese (light cream cheese works too) spread it into a pie plate, top with salsa and shredded cheddar, pop in microwave until good and melted, dig in with fritos or baked tostitos.GOOD STUFF.

fat free refried beans with low fat cheese melted on it - this is something healthy for them.

Soft taco's are less messy, teach them how to fold the end over to get the meat to stay in, my kids only like meat cheese and sour cream or guacamole on them, cause everything else just falls. I always take the rest of the usual toppings and just make a salad, then they take a bite of taco and a bite of salad, and my floor loves me for it, use salsa in place of salad dressing for a more "Mexican" flavor, and some black olives sliced are good if your kids will eat them(put in salad) Chicken Empenadas make a good low sugar dessert, but not as "mexican" as canteloupe

mexican rice, and beans!

Chips & Salsa

I've seen too many answers with the stereotyped rice and refried beans. I'm Mexican and we like to eat them with guacamole and some shredded lettuce and tomato on the side. Also there is a difference between soft tacos and hard ones which are deep fried, you do not mention which, but both can be eaten with the guacamole and lettuce and tomato salad. My kids love sliced tomato with a slight sprinkling of salt and lemon juice. I also give them some shredded cabbage and tomato salad with a nice Italian vinaigrette. Sometimes I give them some fried cubed potato but it is not good to mix flours with potatoes or starch at the same time, so I opt for salads and veggies. Hope it helps.

Refried beans....................just open the can and heat.
Rice................either plain or mix green peppers, onions, tomatoes, etc in to give it some more Mexican flavor.

orzo soup. Or soppa de melon

red beans and rice, black beans and rice, spanish rice, refried beans, or chips with salsa and cheese (nachos)

hope you like it
