What can i make with these ingredients? (details within)?

Okay i have boneless chicken breast, green peepers, 1 tomato and orzo

i kind of want it to be sort of a mexican meal. make it kinda simple. I can get more ingredients if i have to.

Well if you are looking for Mexican, you could try this:

1) Get your water going and cook orzo according to package directions.
2) Cut your chicken into bite size pieces.
3) Dice your tomato and green pepper (would be great if you had some onion here).
4) Heat some oil in a large skillet.
5) Season your chicken with garlic powder, chili powder, cumin, cayenne (if you want a little heat-just a dash), salt & pepper.
6) Cook your chicken for a minute or two in hot oil, then add your diced veggies.
7) Cook until done, then toss your drained pasta into the chicken/veg and mix well.

** If you have a cream of soup and some cheddar cheese you could mix these in and eat as is (for a Mexi Mac & Cheese) or you could put into a casserole dish and bake off for about 15 minutes 350 F until brown and bubbly.

Grilled chicken and Orzo

Kosher salt
Good olive oil
3/4 pound orzo pasta (rice-shaped pasta)
1/2 cup freshly squeezed lemon juice (3 lemons)
Freshly ground black pepper
2 pounds chicken breasts
1 cup minced scallions, white and green parts
1 tomato sliced thin
1/4 green pepper in rings
1 cup chopped fresh dill
1 cup chopped fresh flat-leaf parsley
1 hothouse cucumber, unpeeled, seeded, and medium-diced
1/2 cup small-diced red onion
3/4 pound good feta cheese, large diced


Preheat the oven to 400 degrees F.
Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well.

Meanwhile, place the chicken breasts on a sheet pan, drizzle with olive oil, and sprinkle with salt and pepper, spread out in a single layer. Roast for 10 to 16 minutes, until the chicken is cooked through.

Add the chicken to the orzo and then add the scallions, dill, parsley, cucumber, onion, 2 teaspoons salt, and 1 teaspoon pepper. Toss well. Add the feta and stir carefully. Garnish with sliced tomatoes and green pepper rings Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. If refrigerated, taste again for seasonings and bring back to room temperature before serving.

- Cut up the chicken in small pieces
- On a skillet add 1 onion and wait till its golden brown
- Add the chicken, add garlic (about 2/3 cloves), ginger paste (1 teaspoon) and some salt
- Cook for about 20 minutes.
- Chop up the tomato and pepper. Add some corn if available. Also can use some salsa, but if you dont have salsa then consider some ketchup/bbq sauce.
- Add the chopped ingredients and the sauce.
- Stir fry for about 5 more minutes.
- Cover and let ti cook for 5-7 more minutes in medium heat.

Add a side dish of baked beans with ground cheese on top.

This screams "Greek" to me. Make the orzo and add salt and olive oil. Chop the peppers, sautee with the skinned chopped tomato and some garlic till the tomato has cooked down. Add some oregano.

Srpinkle the chicken with oregano, if possible stuff fresh leaves under the skin. Basil and mint are good here too. Bake the chicken at 400 celcius till the juices are clear. Serve the chicken with the tomato on top of the orzo, add some feta and more olive oil and there you go.

It would probably be easier to cut the chicken up and cook it with the tomato and pepper, but not as tasty.

I'm a vegetarian and don't eat chicken but i support your right to.

If you really want mexican, make chicken fajitas and skip the orzo.
