Preparation of Blackberries?

Is there something you are supposed to do to blackberries prior to eating them or cooking with them? Perhaps covering them with sugar and letting them sit, like you do with strawberries? I am talking about the fresh ones you get in those little plastic containers in the produce section. I bought a package of them and made blackberry pancakes with them last night, but the pancakes didn't turn out very good. They just weren't sweet. Are they supposed to taste like that? I cut them up and put them in the batter and cooked the pancakes like that. Did I do something wrong? I mean, they were okay, but not delicious like I thought they would be. Please tell me about preparation and cooking with blackberries if you know. I would be most grateful for some answers.

The only reason that I could perhaps say for why your pancakes weren't "that good" is if maybe the blackberries themselves are not that sweet or ripe.

Like any berries, some are sweeter and some aren't, depending on growing conditions and handling. Sometimes you just get lucky, or unlucky.
If I were going to use blackberries in a sauce for ice cream or in shortcake I'd do the sugar treatment, but for pancakes they should have been fine just they way you did it. Maybe you just got unlucky.

BLACKBERRY COBBLER Recipe

Ingredients:
1 qt. blackberries
1 c. sugar
1 stick butter
1 c. milk
1 c. sugar
1 c. self-rising flour



Directions:
Boil blackberries with 1 cup sugar and enough water to
make berries juicy for 10 minutes. Melt butter in 9 x 13-inch
baking dish in oven until butter is lightly browned. Combine
milk, 1 cup sugar and flour; beat hard until lumps are gone.
Pour batter into butter; bake 5 to 10 minutes in ( 450 : F) oven.
Pour berries over batter and bake 10 to 15 minutes longer or
until cobbler is browned.

john timothy, alone, blackberries are generally not sweet, especially the store-bought variety. If you wish to make the pancakes again, cover the berries with sugar and let them sit.
For making fresh blackberry desserts, mostly the whole berry is used and the recipes call for tons of sugar to sweeten the berries. My favorite place to look at recipes is www.allrecipes.com. Don't let one bad experience keep you from trying blackberries again. They are being studied for potential treatment of cancer!

Yes, I wouldn't cut them up, just blend them into the batter. Also I would add a little sugar and let them sit for a while, sometimes they are a little bland or sour.

they say blackberry season is may through august....and to be honest, I've always had better luck with the flavor towards the end of the season...think that is typical with most berries...I'm not big on sugaring them if I can get away with it.

whenever I make pancakes with any type of berry, I put maple syrup into the batter - sweeten up the batter as well as helps the berries out, even if they have a slight tart taste, with a sweeter batter it's yummy.
