Fast and easy chicken recipes?

Mother's out of town and I really never did the full on cooking thing.. Dad's hungry and it's really not my thing lol. I wanted to know if anyone had any quick and easy to do chicken breast recipes for a novice like myself :O)

preferably some that deal with veggies? :O)

Answers:
Brown them in a frying pan with a little salt and pepper. Garlic, onion whatever you like. Add any flavor rice-a-roni (just do what the box says) before you put the lid on to simmer top it off with what ever veggies you like.

Yummy chicken with veggies

1. Cut up the chicken in small pieces, wash and boil in water with a dab of salt.
2. after 10 minutes drain the water.
3. On a pan/pot add some cooking oil, 1 medium onion, a little ginger and garlic, some fresh pepper.
4. When the onions are light golden then add the chicken. Cook for 10 minutes. Give it a stir now and then so it does not stick at the bottom.
5. Add some beans, peas, carrot, celeries, broccoli/coliflower or any other veggies you like
6. After couple of minutes see if the chicken is done (make sure that the chicken has been cooked for more than 20 minutes before tasting)
7. Just before you take it off the stove add some sliced tomatoes, bell pepper, cilantro and if you want some cheese

Boneless ginger chicken on bean sprout

1. Cut up the chicken into small pieces.
2. Put in a plastic baggie, toss in some chopper ginger, lemon and salt.
3. Marinade for an hour
4. Heat up olive oil in a skillet
5. Throw in the chicken, also add the chopped ginger that was in the baggie (some people throw the gingers away)
6. Cook for 30 minutes or till the chicken is done.
7. Add soy sauce and tabasco sause
8. Turn up the heat to max
9. Add the bean sprout, mix and cook for 3 mints
10. Turn down heat, you may add some lemon and pepper if you like

you can bake the chicken in a casserole dish covered with salsa and serve with rice and veggies

add a can of cream of mushroom or chicken soup
salt, pepper and curry to taste
then add frozen veggies
cook until done
serve over rice

don't be afraid to be creative and try new things

with boneless skinless chicken breast I usually just rub them with a tiny bit of oil, sprinkle club house steak spice on them and then in the little folding flap underneath I usually stick something in there so it seems fancy, like;
spinach & cream cheese or goats cheese
asparagus & brie cheese
cheddar & broccoli
I usually just come up with something by looking in the fridge.
the more you put in you may need tooth pick, but I usually don't.
cook @ 375 for 20 mins.

stir fry's are also pretty easy, cut up and cook chicken, add veggies and a store bought stir fry sauce. cook some rice or noodles on the side, you can use minute rice to be simple.

Chicken Cordon Bleu II
INGREDIENTS
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream
DIRECTIONS
Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.
Wine Tip

Try with a California Chardonnay

if you just want quick and easy here you go!
cut chicken into strips, season with salt and pepper and brown lightly in a little margarine.add sliced onions and cook another 10mins. then add a package of country gravy mix, cup of water and frozen mixed veggies.
cook over medium heat for about 1/2 hour then serve over biscuits or toast.
if you don't have gravy mix, you can use a can of cream of celery or chicken soup.
a sprinkle of parsley flakes, paprika, garlic powder and sage can also be added but i wanted to keep it simple.
you can serve this over rice too.

Ten minute dinner.

Use minute rice, of course.

Cut the breasts into strips and sautee. in some butter for about 5 minutes, until opagque but still tender. Set aside.

Chop whatever veggies you have on hand and toss in a medium sauce pot. Sautee in butter for a few minutes, just until the veggies start to wilt a bit. Add rice to the veggies and cook rice (with the veggies mixed in) according to directions. When the rice is done, pour out onto a platter, toss the chicken strips onto the rice and you have a wonderfully healthy, quick and easy meal in under ten minutes.

This is your basic chicken and rice recipe. How you topp it off is up to you. Add a cheese sauce, add soy sauce, whatever.

Pollo (Chicken with Olives)

Ingredients:
-1 whole chicken
-3 peppers
-3 tomatoes
-3 zucchini
-100 gr. Black Olives
- 1/2 glass olive oil
-salt and pepper

Cut the chicken into 8 pcs & deep fry until golden.
Add sliced pepper & zucchini.
Mix & cook for 45 minutes.
Then add the black olives 5 minutes before cooking end.
