Try the downtown market in the city core, even take a gander at the phone directory, under Ethnic Foods, butchers or specialty shops.
I ma not sure of the Scandinavian population in Australia, but if the is an area or butcher that can help, you may end up making them yourself, there are a number of sausage making product available at restaurant suppliers or housewares stores, the meat grinders and spices are readily available, the stuffing equipment and casings may be harder to find, but most butcher shops would be able to help or give you the info to get them.
