What is the BEST way to make white gravy for mashed potatoes?

I want to know the best way to make white gravy, for mashed potatoes, chicken strips, and whatever else you put white gravy on..me I like putting it on everything.

The way my grandmother (in Texas) used to make Cream Gravy was:

After frying your meat (chicken, cube steak, sausage, whatever) drain off most of the oil but a couple Tbsp.
Sprinkle across some flour (about the same amount as oil). Stir that up and let it cook til golden...to cook out the "raw" flour taste.
Now pour in some milk and keep stirring so you don't get lumps. Cook til slightly thickened. Season with salt & Pepper.

Yummm....been a long time since I made or ate some...Hmm, wish I had me a plate of chicken fried steak with mashed potatoes and cream gravy!!

White gravy

1/2 cup meat grease*
1 1/2 cups flour
garlic salt
pepper
1 8 oz can evaporated milk
1 cup water

* Chicken fried pour-off with goodies left in is best.

Heat grease until smokey hot, stirring constantly, and add enough flour until heavy. Add garlic salt and pepper to taste (sparingly). Brown sauce then turn to lower heat and add evaporated milk and water, continuing to stir constantly to get rid of the lumps.

Cook to desired thickness.

In a skillet melt 2 tablespoons butter or margarine then add 2 tablespoons of flour and cook for 1 min.Add milk and whisk until it's the right thickness. Add salt and pepper to taste.What time is dinner?

Melt some butter (maybe a 1/4 c.) on the stovetop in a saucepan. Add 2 T. of white flour. Stir it around, keeping it on a low heat setting. Cook the flour in the butter for a few minutes, this adds flavor. Add a few shakes of salt and pepper and a cup of broth. Real broth-Not the stuff you make from boullion cubes. Cook it stirring contantly. Once it boils, you cook it for a minute or so until the gravy thickens. Pull it off the stove and then you can add a little bit of cream or milk . If you want to add more than a half cup then put 3 T. flour in at the beginning. You can also cook chopped onion in the butter before adding the flour.

1 cup Cold water
2 Tbl flour
mix well
pour into hot pan stir stir as it thickens thin with milk or water.

There you are plain "BLAND" white gravy.
You can you can use this as glue for wall paper also or for paper mache.
But you might add salt and pepper or ???

Save your bacon grease in a tupperware container in the fridge. 2 Tbsp of bacon grease, 4 Tbsp flour. Whisk over heat until well combined. Slowly drizzle in milk or half and half. A little pepper and you're done!

We love bacon. And it's still a white sauce.
