I'd like to have some ideas/recipes for snack food for the beach.?
Maybe some kind of snack mix that's kid-friendly and easy to pack.
Answers:
my kids love the cheez-it party mix. sometimes we add m&m's.
trail mix or any dried fruit, crackers, fruit snacks, chips. if you are bringing a cooler, some fresh veggies or pita sandwiches are nice.
trail mix..get all your fav stuff and mix it up..nuts and dried blueberries and m&m's.....gold fish, cut up apples ahead of time so they are ready to munch on...grapes and good and cold..freeze them before you go
pizza rolls, sandwich's,cheese & crackers,goldfish crackers,chips
Dry foods, Cold foods. sand will get on everything so take plates and make the kids sit down to eat, no reaching in a bag of chips you are all sharing. Cold pizza is good at the beach.
Cooked chicken pieces, salads (avoid anything with mayonaisse, unless in cooler box)
Sliced meats, baguette, boiled eggs, cherry tomatoes, olives, humous, smoked mackerel, grated cheese.
Most deli counters are ideal, they even come in little plastic containers.

Smoked Turkey and Apple Wheelies
This wrap sandwich, from the new book Wrap it Up (Three Rivers Press), is very low in fat, but you won't miss it. You can buy smoked turkey and lavash, a flat bread, in the deli section of most supermarkets.
Ingredients
2/3 cup plain low-fat yogurt
1 1/2 to 2 tbsp. drained bottled horseradish, to taste
4 lavash squares (about 8 x 10 inches)
8 large red lettuce leaves
l lb. sliced smoked turkey
l firm apple, such as Granny Smith or Cortland, cored and sliced
Directions
Stir the yogurt and horseradish in a small bowl. Spread each lavash square with 1 tablespoon of the horseradish mixture.
Top each with two lettuce leaves and one quarter of the turkey. Spread one more tablespoon of the sauce on top, then cover with one quarter of the apples. Roll, then wrap well in plastic.
When ready to eat, cut in half. Or, cut into 2-inch "wheelies," attaching toothpicks, if necessary.
Serves 4.
COOKING TIP:
For kids, replace the horseradish-yogurt sauce with mayonnaise. If you can't find lavash, substitute burrito-size flour tortillas and soften according to package directions.
Rainbow Potato Salad
Ingredients
3 tbsp. red wine vinegar
2 tsp. Dijon mustard
2 scallions, sliced
1 1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. olive oil
1/4 cup chicken broth
4 carrots
1/4 lb. fresh green beans
2 lbs. new potatoes, unpeeled
Directions
Combine the vinegar, mustard, scallions, salt and pepper in a large bowl. Whisk in the olive oil, then the chicken broth.
Peel the carrots and slice on the diagonal. Snap off the ends of the green beans and cut them on an angle into thirds. Bring a large pot of water to a boil, add the potatoes, and cook until tender, about 25 to 30 minutes (do not overcook). During the last 1 to 3 minutes, add the vegetables, then drain.
Quarter or slice the potatoes and add them with the vegetables to the bowl of dressing. Toss and refrigerate for 1 hour or until ready to eat. Serves 4 to 6.
trail mix is definitely the best butyou should also bring lots of drinks and maybe even ice pops if you have a small cooler or something to keep them cold
