Teary-Eyed Fried Pork Chops

INGREDIENTS

1 cup corn oil for frying
1 cup all-purpose flour
1 teaspoon garlic salt
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
4 (3/4 inch) thick pork chops
1 cup pepper sauce, such as Franks? Red Hot?

DIRECTIONS

Heat corn oil in a large heavy skillet over medium-high heat for about 5 minutes, or until a pinch of flour sizzles in it.
In a shallow dish, stir together the flour, garlic salt, pepper, and cayenne. Dredge pork chops in this mixture, then place in the hot oil. Cook for about 5 minutes per side, or until golden brown and crispy. Remove from the pan, and drain on paper towels.
Pour the hot sauce into a shallow dish. Dip pork chops one at a time into the hot sauce, so they are nicely coated. You will have teary-eyed pork chops at your fingertips.

corn meal, milk, egg, corn flakes, grape jelly.

mix about 1&1/2 cup of corn meal with about 1/4 cup of milk, the egg, about 1 tablespoon of grape jelly. if it is too thick, add a little milk at a time until you get the consistency you desire, dredge chop through mixture, covering both sides, then put on plate w/corn flakes, covering both sides.
cook in skillet of hot oil until done.
also may cook in oven @ 375 or on grill, but be careful not to let it dry out, may need to cover w/foil when about 1/2 done to help keep moist.

may also add a tablespoon of peanut butter to mixture for added flavor.
also good on chicken.

is very good served w/cantalope.

I apologize ahead of time as I do not use measuring cups, etc. as I cook so....

I take a gallon size ziplock bag and put in about 3-4 cups (estimated) of flour. Then I use Lawry's seasoning salt (or any other seasoning salt would work as well) and mix with the flour, I would estimate 4 tablespoons of season salt for each cup of flour.

I have a little deep frier that i use since we fry a lot of our foods and using the skillet, etc is too messy...

I wash the thawed porkchops in water and one by one i put in the bag of flour and season salt and shake, then i put them into the frier...

delicious!!!

i garauntee there will be flour left over, just close up the ziplock bag (try to squeeze any air out) and stick in teh fridge for the next time you cook!

CHICKEN-FRIED PORK CHOPS

6 pork chops
1 tbsp. milk
1 beaten egg
Crushed crackers (fine)
Salt
Pepper

Combine beaten egg and milk. Dip pork chops in egg mixture, then in cracker crumbs.
In heavy fry pan melt shortening. Brown on both sides in hot shortening. Season with salt and pepper. Place on cookie sheet and bake in oven 30-45 minutes on 350 degrees.

Put a few tablespoons of bacon grease (preferably) or oil in a skillet and heat over medium heat until hot, but NOT smoking. Take your pork chops (I prefer about 1/2 inch thick, bone in) and dip them in beaten egg then dredge in Italian seasoned bread crumbs. Fry until done on one side. Flip, and continue cooking until cooked through. how long this takes depends on the thickness of the chops. You just have to kind of eyeball them. VERY moist and the flavor from the bread crumbs and bacon grease is yum!

marinate pork chops(1 lb) for at least 1 hour or longer. in 1Tbs each of Worcestershire sauce, liquid smoke, apple cider vinegar and soy sauce. Dredge in all purpose flour place in 1/4 inch of very hot oil until turning until both sides are Golden Brown..........
