What something healthy but good i can cook for dinner?

We don't eat fish or pork [we just hate it.]
I want to cook something inexpensive, yet good & healthy for my mom & dad.

Can you provide recipes?

I've always been a fan of light pastas.

This is one that borders unhealthy because of the butter, but it's not too bad. I love the taste and it's great with some crusty bread to dip in the sauce:

- 2 boneless, skinless chicken breasts
- small package of frozen broccoli
- 1/2 cup white wine
- 1/2 stick of butter
- italian seasoning
- 2-4 servings of Farfalle pasta.
- 2 tsp of olive oil
- salt/pepper

1.) add salt and pepper (i prefer kosher salt) to chicken and set aside, begin boiling pasta immediately in salted water
2.) heat a small amount of olive oil over medium heat, add the chicken breasts and brown. Add italian seasoning after first turn of chicken.
3.) Once chicken is browned, begin heating up frozen broccoli--remove the chicken and set aside
4.) Add white wine to pan to deglaze, scrape off all brown bits from chicken (these flavorful bits are the beginnings of your pan sauce)
5.) add 1/4 cup of the starchy pasta water to help thicken the sauce
6.) add the butter to melt down into the sauce
7.) let the sauce reduce until it is the consistency of salad dressing
8.)cut chicken breasts, drain broccoli and add them all back into the pan
9.) cook until warm stirring to incorporate the sauce, then pour entire mixture into drained pasta--toss to coat
10.) finish with fresh parsely and serve with a side of crunchy garlic bread.

The white meat of a chicken is very healthy,I don't know about the inexpensive part...sorry,but good luck and bon appetite

I have a good one. Grilled chicken marsala on a green salad. Buy about a pack of 3 or 4 boneless and skinless chicken breasts. Cut them in half to about 1/2 inch thick. Place your chicken in a gallon freezer storage bag and put about 2 tablespoons each flour and breadcrumbs, 1 tablespoon of italian dried seasoning (crush the seasoning in your hand before placing in the bag... this will release the oils from the spices). Put about 2 tablespoons of olive oil and 2 tablespoons of butter in a hot sauce pan. Dust the excess seasoning mix off of your chicken and place in the pan. Brown on one side and turn over. When you turn the chicken over, put in about 1/4 cup of marsala cooking wine. Let your chicken cook all the way through. Remove the chicken from the heat and let cool for about 5 minutes. Cut into strips and place over your green salad. (I like black olives, capers, and fresh tomatoes in mine.)

How about cooking a chicken stir fry. Use beansprouts, egg noodles, and any vegetables you fancy. Marsala wine and soy sauce with a touch of brown sugar gives it a lovely glaze. It is inexpensive and tasty too. Good luck.
