Would a stainless steel sauteuse be okay to fry chicken in?!

Would a stainless steel sauteuse be okay to fry chicken in?

I have a small Le Cruset dutch oven, which would probably be best, but the sauteuse is twelve inches and would let me do it in two batches. The sauteuse is a Calphalon, so it is not cheap, but can stainless steel maintain the heat well enough to fry in?


Answers:
Calphalon is made from a good quality stainless steel. You will have no problem frying chicken providing the pan is deep enough to cover chicken by half with oil.

The LC dutch oven has a white enamel coating, it won't build a fond, the brown coating fried chicken demands.

Calphalon, depending on the type, has a different coating that also minimizes the fond. Uncoated stainless steel is fine for cooking, but may stick unless you use lots of oil.

Your best and cheapest method would be to get a really large cast iron fry pan. Even age-blackened ones from WWII are still around, but you could buy a new Lodge or other manufacturer.

Yes but nothing beats an old black iron skillet it holds and distributes the heat perfectly.
