Answers:
The Belgian pomme frites are cooked twice so their real cripsy on the outside and soft inside. They're served in a paper cone with a side of mayo and they are yummy!

on the side, the way Americans typically use ketchup

Im sure the mayo is served on the side, I've had fries in many countries and they all use some type of frying oil. ie; Turkey, Norway, England, Spain etc...............
Hope this answered your question.

Cheers!

It's used on the side. Look up belgo centraal online - it is a popular London restaurant which serves Belgian food and drink, which even has menus you can download.

All fries around the world are fried in oil. The mayo is served on the side, just like ketchup. Check it out, there are alot of things you can do to fries. If you are in New York go to the address below. If you live further west, have a look on the internet, it seems belgian fries have a following in america.

Fried in oil and mayo on the side.

on the side...belgium fries as i know it is twice cooked in peanut oil and thick cut. first cooking is to start the process at about 325 degrees. then it's taken out just before it gets any color to it and placed to cool under a papertowel. this steams it so the center of the fries is soft. the second fry is at about 375 degrees which makes it crispy on just the outside, but still soft in the middle. try it with homemade mayo and/or flavored mayo. it's one of my fav for potato dishes.

Mayonnaise is a cold sauce, you cannot heat it or it will curdle, evidently it is not usable to fry anything.
The belgians make the best fries in the world... They fry them in oil, leave them to drain a few minutes than refry again until they are golden... This makes them crispier on the outside and soft and tender on the inside... In Belgium they are sold ready made by street vendors and served in a cone of paper with the mayonnaise on the side. Delicious!

Served on the side.

Mayonnaise is never fried, cannot be fried. I dont know how they fry belgian fries but they are the best I have ever tasted. Mussels and fries and belgian beer mmmmmmmmmm
