Potato Croquettes and Goat Cheese?

I recently went on a cruise and had these yummy potatoes filled with goat cheese. Anyone have a recipe for potato and goat cheese croquettes?

Actually, I've never had them. But your question reminded me of some really good chicken croquettes that I used to get at a coffee shop. Croquettes are something you never see on a menu anymore, and I was curious. So I did a search. I found a recipe for chicken croquettes. Another site had a recipe for potato croquettes. I think if you substitute goat cheese for Romano, you might be able to get something close to what you want.

3 to 4 cups leftover mashed potatoes or make instant mashed pots if no leftovers (Or mash one large cooked russet potato)
1 cup corn
1/2 cup flour
8 oz goat cheese [amount used may vary due to preference and size of croquettes formed]
1 egg, beaten
1 cup panko (Japanese bread crumbs) [Regular breadcrumbs could work as well]
Olive oil (for frying)
Cayenne Pepper or Salt to taste (Optional)


Mix together mashed potatoes and corn. (If using a Russet, be sure to mash it first, preferably with 1/4 a stick of butter). Make into patties that are fat but flat or like cone-shaped croquettes. Add cayenne pepper and salt liberally to the mix if desired, or any other desired spices to taste.

Dip each pattie first in flour, then beaten egg, then panko.

Fry in hot oil. As the croquette is cooked halfway through, place a small handful of goat cheese in the center. Then, place another pattie formed on top (this one should be thinner). Wait until the bottom side is done, and then flip. Drain on paper towels.

Serve with Tonkatsu sauce, or other Asian sauce. (Optional)

This is a great sidedish for beef!
